An excellent cook and cookery teacher herself, the Baroness always dreamed of evolving Luna Restaurant into an island destination. Her vision, to choose from Malta’s most visionary chefs and to bring a rare Michelin star to Naxxar. She and Justine favoured a bold, contemporary approach to locally grown, seasonal produce, resulting in bold flavours and a unique modern Maltese style of cooking. Chef, Andrew Borg brings all his skill and mastery of flavour to the Baroness’ vision.

The Palazzo kitchen garden has recently been restored and fruit, vegetables and herbs have all been planted to offer fresh homegrown produce in the restaurant along with the greeny-gold extra virgin oil harvested from the garden’s ancient olive grove. “I shine a light on natural cooking, fresh ingredients and following the seasons, and I have been so inspired by the palace gardens”, said Chef Borg.
